I asked a representative from the BNIA (the Armagnanc trade group) and received the following response:

Those obligatory three months of being in an inert container are essential for the resting and stabilizing of the Armagnac after the distillation and also after the reduction (which can take place whenever the producer deems right), where water is added. It will give it the chance to marry well giving a balanced taste....there can be a bit of air that gets in which will also help with the stabilizing.skuhttps://www.blogger.com/profile/00487419662314518931noreply@blogger.comtag:blogger.com,1999:blog-9082156144028140004.post-62658776471719220242013-02-07T16:40:13.531-08:002013-02-07T16:40:13.531-08:00i'm confused about the "three months in i...i'm confused about the "three months in inert containers" requirement for the white armagnac.

if the container is inert, wouldn't the armagnac "straight from the tap," so to speak, taste the same as the one stored three months?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-9082156144028140004.post-51151663746126188222013-02-07T08:12:24.289-08:002013-02-07T08:12:24.289-08:00Thanks for the info Serge. People down there always liked to sip blanche on ice. Here's an older bottle from my stash (designed by Picasso, how cool is that?) http://www.whiskyfun.com/Blanche.png It was sold under the simple 'eau-de-vie de vin' appellation. Even for a "larger" producer they make a ton of quality goods. The 8, 12, and 15 year olds are 100% folle blanche and at full proof. Solid values.

The party they through was quite fun as well. Nice people. David Dnoreply@blogger.com
